Ingredients

4 ounces honey
1/2 teaspoon bicarbonate of soda
1 teaspoon cinnamon
4 ounces butter or 4 ounces margarine
4 ounces brown sugar
caster sugar
1 egg
2 -3 tablespoons milk
1/2 lb flour

Instructions

1.Preheat your oven to 160°C and prepare a baking tray lined with parchment paper.
2.In a bowl, mix the honey and bicarbonate of soda.
3.In a large mixing bowl, cream the butter and brown sugar until smooth.
4.Add the egg, cinnamon and honey mixture. Mix together the ingredients thoroughly.
5.Gradually add the flour and milk to the mixture, making sure it is well combined.
6.Take small dough balls, about a tablespoon in size and place them onto the baking tray. Make sure they are spaced well apart and lightly press them down with your fingers.
7.Sprinkle caster sugar on the top of each dough ball.
8.Put the baking tray in the preheated oven and bake for about 12-15 minutes until the biscuits turn golden brown in colour.
9.Once baked, remove the baking tray from the oven and let the biscuits cool down before serving them.
