Ingredients

3/4 cup sour cream
1/4 cup unsweetened applesauce
1/4 cup plain breadcrumbs
1/4 cup prepared horseradish
1/4 cup chives , chopped
salt , to taste
black pepper , to taste
2 lbs ground sirloin
1/4 cup Worcestershire sauce ( eyeball it )
1/4 cup fresh curly-leaf parsley ( Rachel Ray called for curly parsley , but I only cook with Italian flat-leaf parsley ) or 1/4 cup flat-leaf Italian parsley ( Rachel Ray called for curly parsley , but I only cook with Italian flat-leaf parsley )
1 tablespoon extra virgin olive oil
4 seeded kaiser rolls , split
1 bunch watercress or 1 bunch cress mixed sprouts
1 tablespoon fresh chives , chopped ( for garnish )

Instructions

1.Preheat the grill or skillet to medium-high heat.
2.In a large mixing bowl, combine the sour cream, applesauce, breadcrumbs, horseradish, chopped chives, salt, and black pepper. Mix well.
3.Add the ground sirloin to the bowl and mix it well with the other ingredients using your hands. Divide the mixture into 4-6 equal portions depending on the desired size of the patty.
4.Add Worcestershire sauce and parsley to the bowl. Mix it well. Divide the mixture into 4-6 equal portions depending on the desired size of the patty.
5.Brush the patties with olive oil on both sides. Grill or cook the patties on medium-high heat until cooked through, flipping once, 5 to 7 minutes per side.
6.Toast the kaiser rolls on the grill or under the broiler for 1-2 minutes, until lightly browned.
7.Add the watercress or cress sprouts on the bottom half of each roll. Place a patty over the cress, and add a dollop of horseradish sauce on top. Add a sprinkle of fresh chopped chives. Top with the other half of the roll and serve hot.
