Ingredients

4 lamb shanks
oil , to fry
1 leek
4 celery ribs
2 carrots , not peeled
2 onions , not peeled
1 garlic , bulb unpeeled
1 bay leaf
1 tablespoon thyme
1 tablespoon rosemary
2 tablespoons red currant jelly
150 ml port wine
750 ml chicken stock
Lamb Shank is a classic main course dish that has been enjoyed by generations. This slow-cooked lamb shank dish is a modern take with the addition of Jacob's Creek Reserve Cabernet Sauvignon, making it a real crowd-pleaser. The sauce and the wine make the meat tender and juicy. You can also serve the lamb shanks on a bed of mashed potatoes or with a side of some seasonal vegetables. Instructions

1.Pre-heat oven to 180˚C.
2.Place a large oven safe casserole dish over high heat. On a separate pan heat the oil and brown the lamb shanks on each side in the dish. Remove each lamb shank.
3.In the same dish add leeks, celery, carrots and onions, stirring over medium-low heat for 10 minutes.
4.Add garlic bulb, bay leaf, thyme, rosemary, red currant jelly, port wine and Jacob's Creek Reserve Cabernet Sauvignon into the dish, and then add the lamb shanks in.
5.Pour in chicken stock to cover half of the lamb shanks.
6.Cover the casserole dish and put it in the preheated oven for 3 hours.
7.After 3 hours, remove the lid and allow it to cook for another 30 minutes until the lamb shanks have a nice caramelized colour.
8.Remove from the oven and allow it to cool for 10 minutes before serving.

PROS

This slow-cooked lamb shank dish is very easy to make but tastes like something complex.
The addition of Jacob’s Creek Reserve Cabernet Sauvignon to this classic lamb dish takes it to the next level.
It makes excellent use of a relatively cheaper cut of lamb and it’s perfect for a hearty family dinner.

CONS
