500 g fresh chestnuts
50 ml virgin olive oil
1 onion , peeled and finely chopped
1 bay leaf
1 teaspoon salt
2 teaspoons ground black pepper
5 fresh sage leaves
500 ml skim milk
500 ml water

Instructions

1.Score an ‘x’ on the flat side of each chestnut.

4.Heat the oil in a saucepan over medium heat. Add the onion, bay leaf, salt, 1 teaspoon of black pepper, and sage leaves, then cook until the onion is soft.
5.Add the chestnuts, skim milk, and water into the pan, cover, and simmer for 25 minutes.
6.Remove the bay leaf and puree the soup. Strain through a sieve and season with salt and pepper to taste.
