Ingredients

3 ounces sultanas ( optional ) or 3 ounces raisins ( 80g ) ( optional )
4 tablespoons water
2 cups plain flour
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 teaspoon baking powder
1 1/4 teaspoons baking soda
1/2 cup olive oil
3/4 cup caster sugar
1/2 vanilla pod or 1 teaspoon vanilla extract
2 eggs , lightly beaten
3 small bramley apples ( about 360 g ) or 4 small granny smith apples , peeled , cored and diced into 1 cm or 1/2 inch cubes ( about 360 g )
1 grated lemon , zest of
2 egg whites
100 g unsalted butter , at room temperature
100 g light muscavado sugar
85 ml maple syrup or 85 ml golden syrup
220 g cream cheese , at room temperature
This Apple & Olive Oil Cake is perfect for anyone that loves a light, fruity dessert. Instructions

1.Preheat oven to 180C/gas mark 4/350F.
2.Grease and line a 23cm/9inch cake tin.
3.Place the sultanas/raisins in a small saucepan and add the 4 tablespoons of water.
4.Place over a medium heat and bring to the boil, then leave to cool.
5.Sift together the flour, cinnamon, salt, baking powder and baking soda into a bowl.
6.In a separate bowl, beat the olive oil, caster sugar, and seeds from the vanilla pod or vanilla extract until well combined.
7.Gradually whisk in the eggs, followed by the flour mixture, and then the grated lemon zest.
8.Fold in the diced apples and cooled raisins.
9.In another bowl, whisk up the egg whites until they form stiff peaks.
10.Using a large metal spoon, gently fold the egg whites into the cake mixture.
11.Spoon the mixture into the prepared tin.
12.Bake in the oven for 50-55 minutes until a skewer inserted into the center comes out clean.
13.Allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
14.To make the icing, beat together the butter, muscavado sugar and maple or golden syrup.
15.Add the cream cheese and mix until well combined.
16.Ice the cooled cake, then cut into slices and serve.
