Ingredients

350 g diced venison
150 ml red wine
80 g carrots , diced
1 small onion , diced
1 bay leaf
1 juniper berries
20 g butter
1 medium onion , sliced
1 sprig thyme
2 teaspoons sugar
15 g flour
1 tablespoon tomato paste
300 ml vegetable stock
20 g wild mushrooms
1 sheet puff pastry , to cover the 18cm pie dish with a 1cm overhang
1 egg yolk , for glazing
A classic English dish, venison and wild mushroom pie is a hearty and flavorful meal that is sure to satisfy any appetite. Made with tender venison, earthy wild mushrooms, and a flaky puff pastry crust, this dish is perfect for special occasions or cozy family dinners. Instructions

1.Preheat oven to 180C.
2.In a frying pan, brown the venison over high heat. Add in the red wine, carrots, onion, bay leaf, and juniper berries, and reduce heat to a simmer. Cook for 1-2 hours, stirring occasionally, until the venison is tender.
3.In a separate pan, melt the butter over medium heat. Add in the sliced onion, thyme, and sugar, and cook for 10-15 minutes until the onion is caramelized.
4.Add in the flour and tomato paste, and stir until well combined. Gradually pour in the vegetable stock, stirring constantly until the sauce has thickened.
5.Add the wild mushrooms to the venison mixture, and stir well. Pour the venison mixture into an 18cm pie dish, and cover with a sheet of puff pastry. Brush the pastry with egg yolk to glaze.
6.Bake in the oven for 25-30 minutes until the pastry is golden brown and crispy. Serve warm, and enjoy!
