Somerset Welsh Rarebit is a classic dish of England, often enjoyed as a snack or quick breakfast. It is essentially a cheese sauce poured over toasted bread. The origins of this dish date back to the 18th century when it was known as Welsh Rabbit. The name was later changed to Welsh Rarebit, as the dish did not actually contain any rabbit meat. Today, there are many variations of the recipe, but the basics remain the same - a cheesy, tangy sauce poured over toasted bread. This recipe for Somerset Welsh Rarebit uses English muffins for a slightly different take on the classic dish.

Instructions

1.Preheat the broiler on your oven.
2.Split the English muffins and toast in a toaster until golden brown. Set aside.

6.Place the toasted English muffins on a baking sheet, and pour the cheese sauce over the top of each piece.
7.Place in the broiler and cook until golden brown and bubbling, about 3-4 minutes.
