Ingredients

14 ounces all-purpose flour , sifted and seasoned with salt and pepper
7 ounces butter , chilled and cubed
1 egg , beaten to glaze
2 tablespoons cracked black pepper
1 medium sweet potato , peeled and diced
3 ounces rutabagas , peeled and diced
3 ounces carrots , peeled , diced
9 ounces lamb steaks , cut into 1/2in cubes
2 tablespoons of fresh mint
1 red onion , finely chopped

Instructions

1.Preheat the oven to 375°F.
2.In a bowl, mix together the flour, salt, and pepper. Add the cubed chilled butter and mix until the butter is well incorporated. Gradually add chilled water and mix until a dough is formed.
3.In a pot, boil the sweet potatoes, rutabagas, and carrots until tender. Drain and transfer to a mixing bowl.

6.Divide the dough into 8 small balls. Roll each ball out and spoon some of the lamb and vegetable mixture into the center. Fold the dough over and crimp the edges together to seal in the filling.
7.Brush each pasty with beaten egg and sprinkle cracked black pepper on top.
8.Bake for 35-40 minutes until golden brown.
