Ingredients

500 g potatoes , peeled and rinsed
salt
350 g salmon fillets
1/4 chicken stock cube
1 bay leaf
1 tablespoon tomato ketchup
1 teaspoon anchovy essence ( optional )
pepper
20 g butter
20 g flour , plus extra for dusting
100 ml milk
100 g young spinach leaves
2 tablespoons chopped dill leaves
2 tablespoons vegetable oil
1 lemon
This Salmon Fish Cakes recipe is perfect when you're in the mood for fish. It offers a healthy option while still delivering tasty flavors. Salmon can provide many benefits for your heart and brain. Instructions

1.Cut the potatoes into small pieces and put them in a large pot with enough cold water to cover them. Add a pinch of salt and bring to a boil.
2.Reduce the heat and simmer for 15 minutes or until the potatoes are tender. Drain and mash the potatoes.
3.Preheat the oven to 200C/180C fan/gas 6.
4.In a saucepan, heat the milk with the bay leaf and chicken stock cube.
5.Add the salmon fillets to the simmering milk and poach for 6-8 minutes until cooked through. Remove the fish from the saucepan and discard the skin. Flake the fish into small pieces, removing any bones.
6.In a large frying pan, melt the butter over medium heat and add the flour. Stir until a paste forms.
7.Gradually pour in the milk used for poaching the fish while whisking constantly to create a smooth sauce. Add the spinach and stir for 2 minutes until the spinach has wilted.
8.Stir in the ketchup, anchovy essence, salt, pepper, dill and the flaked salmon. Add the mashed potatoes and mix everything together.
9.Divide the mixture into 12 golf-sized balls before flattening each into a fish cake. Dust each cake with flour.
10.In a frying pan, heat the vegetable oil over medium heat. Add the fish cakes and cook for 2-3 minutes on each side until lightly browned.
11.Transfer the fish cakes onto a baking tray and bake for 10-15 minutes.
12.Squeeze lemon juice over the fish cakes and serve with the spinach sauce on the side.
