Instructions

1.Clean and rinse the whole chicken under cold running water.

3.Bring to a boil, and then lower the heat and simmer for 1 to 1.5 hours or until tender.
4.Remove the chicken and ham from the pot; separate meat from bones and skin. Cut the meat into bite-sized pieces.
5.Skim off fat from the surface of the broth.
6.In a separate bowl, whisk together egg yolks and heavy cream.
7.Gradually add a cup of the hot soup broth to the yolk mixture, whisking constantly; then add it back to the soup pot, whisking.
8.Reheat the soup, but avoid boiling.
9.Add the cut-up chicken and ham back to the soup and heat it through.
10.Season to taste with salt and black pepper. Serve hot.
