Instructions

1.Rinse the 2 chickens inside and out, pat dry
2.Combine the olive oil, salt, garlic, parsley, rosemary, black pepper, lemon juice and zest, ginger, and cayenne pepper to create a marinade. Divide evenly and rub all over chicken
3.Place the chickens in the fridge for at least 3 hours to marinate
4.Preheat the oven to 350°F and cook for 20 minutes per pound
5.Let the chicken rest for 15 minutes before serving
