Ingredients

1 lb cooking apple
2 ounces brown sugar
1/2 - 1 teaspoon ground cinnamon
1 cup cranberries ( when you use dried cranberries add 2 tablespoons apple or orange juice )
4 ounces soft butter or 4 ounces margarine
4 ounces sugar
2 large eggs , beaten
4 ounces ground almonds

Instructions

1.Preheat the oven to 350°F/180°C.
2.Butter a 2 pint ovenproof dish.

4.Add the cranberries to the apple mixture. Cook gently until they pop. Stir in the apple or orange juice if using.
5.Cream the butter or margarine and sugar until light and fluffy.
6.Gradually stir in the beaten eggs, a little at a time, adding 1 tablespoon of the flour mixture with the last addition to prevent curdling.
7.Fold in the remaining flour and the ground almonds.
8.Spoon the apple mixture into the prepared dish, then cover with the pudding mixture.
9.Bake in the preheated oven for 35-40 minutes until the top is golden brown.
