Ingredients

125 g soft unsalted butter
100 g dark chocolate , broken into pieces
300 g morello cherry jam
150 g caster sugar
1 pinch salt
2 large eggs , beaten
150 g self-raising flour
100 g dark chocolate
100 ml double cream
12 natural coloured glace cherries
Chocolate Cherry Cupcakes are a delicious and decadent dessert perfect for any special occasion. The rich, indulgent flavor of dark chocolate pairs perfectly with the sweetness of Morello cherry jam, and the chocolate ganache frosting adds an extra level of indulgence. Instructions

1.Preheat the oven to 180C/160C fan/gas 4. Line a 12-hole muffin tin with cupcake cases.
2.Melt the butter with the dark chocolate in a heatproof bowl set over a pan of barely simmering water, or slowly in the microwave.
3.Stir in the cherry jam, sugar and salt. Add the eggs, then sift in the flour and briefly mix.
4.Divide the mixture between the paper cases. Bake for 15 mins or until risen and springy to the touch. Cool on a wire rack.
5.To make the icing, put the dark chocolate and double cream into a small pan and heat gently just until the chocolate has melted and the mixture is smooth.
6.Remove from the heat and allow to cool and thicken slightly, then spread over the cooled cupcakes. Top each with a cherry (or cut the cherries in half or quarters, if you prefer).
