Ingredients

12 cherry tomatoes
salt and black pepper to taste

1 bay leaf , crumbled
1/4 cup pine nuts
2/3 pound thin green beans , trimmed
1 package arugula leaves
6 fresh basil leaves , torn into pieces
1 tablespoon red wine vinegar
2 tablespoons whole-grain mustard
2 cloves garlic , minced
1/2 teaspoon honey
1/4 cup olive oil
6 ounces crumbled feta cheese
This Feta and Slow-Roasted Tomato Salad with French Green Beans is a perfect combination of sweet, salty, savory, and tangy flavors in one bowl. Instructions

1.Preheat oven to 325 F.
2.Slice cherry tomatoes in half lengthwise and place them on a baking sheet.
3.Drizzle with olive oil, sprinkle with salt and black pepper and add crumbled bay leaf. Toss the tomatoes well.
4.Roast for about 90 minutes until the tomatoes are soft, shriveled and slightly brown.
5.While the tomatoes are roasting, toast the pine nuts in a small skillet over medium heat until golden brown. Set aside.
6.Bring a pot of salted water to a boil. Add the French green beans and cook for about 3-5 minutes until tender. Drain and rinse with cold water, set aside.
7.In a bowl, whisk red wine vinegar, whole-grain mustard, garlic, honey, and salt and black pepper until blended. Slowly whisk in olive oil to create the salad dressing.
8.In a large salad bowl, toss together arugula leaves, roasted tomatoes, green beans, feta cheese, and basil leaves with the dressing.
9.Serve and sprinkle with toasted pine nuts on top.
