Ingredients

1/3 cup unsalted macadamia nuts
1 tablespoon honey
1/2 large ripe pineapple , peeled , cored , and cut into 1/4-inch pieces
4 ripe kiwi fruits , peeled and cut into 1-inch pieces
2 small ripe papayas , peeled , seeded , and cut into 1-inch pieces
1 1/2 cups sugar
1 vanilla bean , split and scraped ( preferably Tahitian )
2 tablespoons freshly squeezed lime juice ( not the bottled kind )
1/4 cup dark rum
1 cup heavy cream
1 tablespoon dark muscovado sugar or 1 tablespoon dark brown sugar

Instructions

1.Preheat the oven to 350°F (177°C).
2.Spread the macadamia nuts on a baking sheet and sprinkle with honey. Bake for 10 minutes, stirring a few times to ensure even toasting.
3.In a large bowl, toss the pineapple, kiwi, and papaya together and set aside.
4.In a small saucepan, combine the sugar, vanilla bean, lime juice, and rum. Cook over medium heat, stirring until the sugar dissolves. Remove from heat and let cool completely.
5.Remove the vanilla bean from the syrup and stir the syrup into the fruit. Chill for 30 minutes in the refrigerator.
6.In a large chilled bowl, whip the cream until soft peaks form. Sprinkle in the muscovado sugar and continue whipping until stiff peaks form.
7.Serve the chilled fruit and syrup in dessert dishes and top with the whipped cream and toasted macadamia nuts.
