Ingredients

1 slice stale bread
25 g walnuts
1/4 cup parsley
1 garlic clove , chopped
500 g mixed mushrooms ( ceps and chestnuts are perfect )
2 tablespoons olive oil
25 g butter
500 g ready made shortcrust pastry
150 g blue cheese , e.g . Roquefort cheese
3 cups lambs lettuce
25 g walnuts , chopped
2 tablespoons walnut oil
1 tablespoon lemon juice
Mushroom and Walnut Toasties are a tasty and healthy appetizer that will impress your guests. Instructions

1.Preheat the oven to 180°C.
2.Put the bread into a food processor with the walnuts and parsley and pulse until coarse crumbs.
3.Add the garlic and pulse again a few times.
4.Heat the olive oil and butter in a frying pan and fry the mushrooms for a few minutes until tender.
5.Roll out the pastry on a floured surface and cut out small rounds or squares.
6.Place them on a baking sheet lined with baking parchment.
7.Divide the mushroom mixture over the pastry rounds and crumble the cheese over the mushrooms.
8.Place in the oven and bake for around 8-12 minutes until the pastry is cooked and golden.
9.In a small bowl whisk together the walnut oil and lemon juice.
10.Pile up the lambs lettuce with the chopped walnuts and drizzle over the dressing.
