290 ml milk
115 g all-purpose flour
1 pinch salt
3 eggs
1 tablespoon olive oil

Instructions

1.Preheat the oven to 425°F (220°C).
2.Pour milk into a blender, add flour and salt, then add eggs and blend until smooth.
3.Carefully remove muffin tray from oven and drizzle a little oil evenly into each of the moulds. Return muffin tray to oven for a few minutes to heat up.
4.Once the muffin tray is hot, carefully pour the batter evenly into the moulds. Tip: Work quickly so the tray stays hot and oil is hot while pouring the mixture.
5.Place muffin tray back into oven and bake puddings for 20-25 minutes until golden and risen. Do not open the oven door while they are cooking.
6.Serve hot with any roast and gravy.

PROS
