Ingredients

3/4 cup sugar
3/4 cup fresh orange juice
1/4 cup Grand Marnier ( or other orange liqueur )
1 package fresh cranberries
1/2 cup sugar
5 tablespoons cornstarch
2 1/2 cups 2 % low-fat milk
2 large eggs , lightly beaten
2 teaspoons vanilla extract
1/8 teaspoon salt
1 loaf cake ( pound cake such as Sara Lee cut into 1/2 inch cubes )
1 teaspoon orange rind

Instructions

1.In a medium saucepan, bring 3/4 cup sugar, orange juice, and Grand Marnier to a boil over medium-high heat.
2.Stir in cranberries, reduce heat and simmer until berries pop and mixture thickens slightly, stirring occasionally for around 10-12 minutes.
3.In another medium-size saucepan, whisk 1/2 cup sugar, cornstarch, and 1/8 teaspoon salt until blended.
4.Gradually whisk in milk.

6.Cook over medium heat, stirring continually, until the mixture thickens and comes to a boil. This should take around 12-15 minutes.
7.Remove from heat and stir in vanilla and 1 teaspoon of grated orange rind.
8.Layer half of the cake cubes in a large glass trifle or serving bowl and top with half of the cranberry sauce.
9.Pour half of the custard over the trifle and repeat the layering with the remaining cake, cranberry sauce, and custard.
10.Cover and chill for at least 2 hours before serving.
