4 medium sweet potatoes

3 eggs , lightly beaten
sea salt
garlic powder

tartar sauce ( optional ) or honey malt vinegar ( optional )

In this West Coast Style recipe, we coat fresh salmon fillets in a spicy flour mixture before frying and baking them until they are crispy and golden. To add some sweetness to the dish, we also serve thin, crispy sweet potato fries alongside the fish. Instructions

1.Preheat the oven to 400°F.
2.Cut the sweet potatoes into thin fries and place them in a bowl of cold water to soak for 20 minutes.

4.Dip each salmon fillet into the beaten eggs, then coat them in the flour mixture.
