Ingredients

14 lbs goose , washed and patted dry
3 medium onions , peeled and sliced in thick segments
2 tablespoons olive oil
2 tablespoons all-purpose flour
2 glasses dry marsala
3 cups stock or 3 cups water
1 1/4 teaspoons English mustard powder
1 tablespoon whole grain mustard
12 crushed juniper berries
2 tablespoons red currant jam

Instructions

1.Preheat the oven to 325 degrees Fahrenheit.
2.Prick the goose skin several times with a fork to release the fat and rub salt inside and out.

4.Lay the goose on a rack in a large roasting pan and roast it for 2 1/2 - 3 hours, or until the juices run clear and the meat is cooked through.
5.In a separate pan, heat olive oil and flour together, add marsala and stir in the mustard powder.
6.Add the juniper berries and stock (or water) and red currant jam.
7.Reduce the heat and let it simmer while stirring regularly.
8.Carve the goose and serve with juniper sauce.
