Beef Pasties with Caramelized Onions and Stilton Cheese are a traditional English dish that dates back to the 13th century. They were originally made as a portable meal for miners and other workers who needed a hearty meal that could be eaten on-the-go. Today, they are a popular entree that can be enjoyed for lunch or dinner. These pasties are filled with tender skirt steak, caramelized onions, and crumbled Stilton cheese, all wrapped up in a flaky, buttery crust. The combination of flavors and textures make these pasties a satisfying and delicious meal.

Instructions

1.In a large bowl, mix together the all-purpose flour, whole wheat flour, and salt. Cut in the shortening and butter until the mixture resembles coarse crumbs.
2.Add enough of the ice water to form a dough. Divide the dough into eight pieces and roll each piece into a 6-inch circle.
3.In a large skillet, heat the olive oil over medium heat. Add the onions and cook until caramelized, about 15-20 minutes. Add the white wine and thyme, and continue cooking until the wine has evaporated.
4.Season the skirt steak strips with 1/2 teaspoon of the coarse salt. In a separate skillet, cook the steak strips over medium-high heat until browned.
5.Preheat your oven to 375°F. On each dough circle, place a portion of the caramelized onions, cooked steak strips, and crumbled Stilton cheese. Fold the dough over the filling, pressing the edges to seal.
6.Brush the egg white over the top of each pasty, and sprinkle with the remaining coarse salt. Cut a small slit in the top of each pasty to allow steam to escape.
7.Place the pasties on a baking sheet and bake for 35-40 minutes, until golden brown.
