Instructions

1.Preheat the oven to 200°C.
2.Cut the chicken fillets into thin strips.
3.Remove the seeds from the peppers, and cut them into thin strips.
4.Cut the courgettes and red onions into small cubes.
5.Spread the peppers, courgettes, and red onions on a baking tray, sprinkle with salt, black pepper, and olive oil.
6.Roast for 20 minutes in the preheated oven.
7.While the veggies are roasting, cook the chicken strips in another pan on medium/high heat with blackened cajun seasoning(optional).
8.Take the flour tortillas and spread a teaspoon of red pesto sauce in each one.
9.Add cooked chicken strips and roasted veggies to the tortillas.
10.Add a handful of fresh basil leaves on top of the veggies.
11.Fold the ends of the tortilla and then roll it up into a cylinder, making sure the filling is tight inside.
