Ingredients

6 -8 sausages
4 slices smoked bacon ( I use back bacon but streaky would also work )
1 large carrot
12 button mushrooms
1 large leek
1/2 green apple
220 ml cider ( regular fizzy stuff from a can is fine )
1 pork bouillon cube ( I use Knorr )
300 ml boiling water
1 tablespoon plain flour ( optional )

Instructions

1.Preheat your oven to 180°C/350°F/gas mark 4.
2.Brown the sausages in a frying pan for a few minutes on each side.
3.Transfer the sausages to an ovenproof casserole dish.
4.Add the sliced bacon to the pan and cook for 2 minutes on each side.
5.Add to the casserole dish.
6.Peel and slice the carrot, slice the mushrooms and chop the leek.
7.Saute the carrot and mushrooms in the bacon fat for 2-3 minutes.
8.Add the leek and cook for another 2 minutes.
9.Add the apple, bouillon cube, cider and water to the pan.
10.Bring to the boil, whisking in the flour if using, to thicken the mixture.
11.Pour over the sausages.
12.Cover the casserole with a lid or foil, and bake for 45-60 minutes until the sausages and vegetables are cooked.
