Ingredients

1 cup water , plus
1/2 cup water , see note
1 ounce dried wild mushrooms , such as morel , shiitake or 1 ounce porcini mushroom
1 large onion , chopped
2 carrots , diced
3 small turnips , peeled and cut in quarters
2 parsnips , diced
4 -5 small potatoes , cut in half
1/2 lb shiitake mushroom , halved
3 dried tomatoes , made into powder
8 ounces seitan , cut in small chunks
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried sage
2 tablespoons red wine vinegar , see note
1 tablespoon arrowroot ( or more )
2 tablespoons chopped fresh parsley
fresh ground pepper
Bad Hunter Stew, also known as Setian Stew, is a comforting and rustic dish that originated in Eastern Europe. Traditionally made with game meat, this vegan version substitutes seitan, a wheat-based protein, for a hearty and satisfying bite. Instructions

1.In a large pot, soak the dried wild mushrooms in 1 cup of water for at least 15 minutes.
2.In the meantime, chop the onion, dice the carrots and parsnips, peel and cut the turnips in quarters, cut the potatoes in half, and halve the shiitake mushrooms.
3.Once the wild mushrooms have softened, remove them from the water and chop them.
4.Pour the soaking water into the pot with the chopped mushrooms, along with the onion, carrots, turnips, and parsnips. Bring to a boil, then reduce the heat and simmer for 20 minutes.
5.Add the potatoes, shiitake mushrooms, dried tomato powder, seitan, and dried herbs to the pot. Simmer for 20 more minutes or until the vegetables are tender.
6.In a small bowl, whisk together the red wine vinegar and arrowroot until smooth. Stir into the stew and cook for 5 more minutes or until the sauce has thickened.
7.Season with freshly ground pepper and sprinkle with chopped parsley before serving.
