Ingredients

1 lemon
1 lime
4 ounces self raising flour ( ideally from Laxey flour mill )
3 eggs ( Gellings are always good )
50 g of isle of man creamery butter , soft
110 g caster sugar
icing sugar
1 carton of isle of man creameries double cream
4 table spoons of a good quality lemon curd
1 damp cloth
The Lemon and Lime Roulade is a delicious dessert that is perfect for any occasion, especially when you want something light and refreshing. Instructions

1.Preheat the oven to 180°C and line a baking tray with parchment paper.
2.Grate the zest of the lemon and lime and squeeze out the juice, keep aside the zest and juice separately.
3.Beat the eggs and sugar together until frothy, light and doubled in size.
4.Add the flour and lemon zest to the egg mixture and fold gently to combine.
5.Pour the mixture onto the baking tray and spread it out evenly.
6.Bake for 10-15 minutes, until it’s golden brown.
7.Place a damp cloth on a flat surface and sprinkle a generous amount of icing sugar on it.
8.Carefully remove the roulade from the oven and turn it out onto the damp cloth.
9.Roll up the roulade with the help of the cloth and let it cool down.
10.Beat the double cream, lemon and lime juice together until stiff
11.Carefully unroll the cooled roulade and spread lemon curd and cream mixture on it.
12.Roll it back up, leave it to chill for a while and dust some icing sugar over the top before serving.

PROS

This tangy dessert is a real crowd pleaser and will satisfy your sweet tooth.

CONS

If overbaked, the roulade can be tough and if under-baked, it will fall apart.
