Ingredients

1/3 cup beef drippings ( from roast )
1 shallot , minced
1 garlic clove , minced
1 cup all-purpose flour
1/8 teaspoon salt
2 large eggs
2/3 cup water
2/3 cup milk
1 tablespoon minced flat leaf parsley
Yorkshire Puddings are a classic British side dish, traditionally served alongside roast beef and gravy. Made from a simple batter of flour, eggs, milk and beef drippings, the Individual Yorkshire Puddings are baked in a muffin tin until crispy on the outside and soft and fluffy on the inside. Instructions

1.Preheat your oven to 220C/425F/Gas 7.
2.In a large mixing bowl, whisk together the flour and salt.
3.Whisk in the eggs until combined.
4.Gradually add in the water and milk, whisking constantly until the batter is smooth and free of lumps.
5.Add the minced shallot, garlic and parsley to the batter.
6.In a 12-hole muffin tin, divide the beef drippings evenly among the wells.
7.Place the muffin tin in the preheated oven for 2-3 minutes until the drippings are smoking hot.
8.Carefully remove the muffin tin from the oven and immediately pour the batter into the wells, dividing it evenly.
9.Place the muffin tin back into the oven and bake for 20-25 minutes until the puddings are puffed up and golden brown.
