1 cup self rising flour
2/3 cup water
1 1/2 lbs baking potatoes
oil , for frying
1 1/2 lbs cod fish fillets , cut into 4 pieces
salt and pepper , as needed
lemon wedge , as needed

Instructions

1.In a large mixing bowl, whisk together the self-rising flour and water until it forms a thick batter.
2.Heat oil in a deep fryer or a large saucepan over medium heat. Wait for the oil to reach 375°F.
3.Slice the baking potatoes into thick wedges, add to the hot oil and fry for 5 minutes. Remove with a slotted spoon and drain on paper towel.
4.Increase the heat of the oil to 400°F.
5.Season cod fish fillets generously with salt and pepper.
6.Dip the fish fillets into the batter making sure each fillet is completely coated and add to the hot oil. Fry for about 5-6 minutes, turning occasionally, until golden brown.
7.Remove the fillets with a slotted spoon, drain on paper towel.
