3 -4 lbs roasting chickens
2 -3 tablespoons olive oil
1 onion
salt

2 -3 tablespoons flour

Instructions

1.Preheat the oven to 425°F (220°C).

5.Flip the chicken to the other side and roast for another 20 minutes.

7.Remove the chicken from the oven and let it rest for 10 minutes. Reserve the drippings from the bottom of the baking dish.
8.In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the flour and cook while whisking until it turns brown.
9.Gradually pour in the drippings from the baking dish while whisking.
10.Continue cooking while whisking until the gravy thickens. Serve the gravy with the chicken.
