Instructions

1.Preheat the oven to 425°F (220°C).
2.In a large ovenproof skillet over medium heat, melt butter and add the garlic for about 1 min or until fragrant.
3.Add the thyme sprigs and carrots to the skillet.
4.Pour in the chicken broth and season with salt and pepper. Bring to a simmer for 5-6 mins or until the carrots are slightly tender.
5.Transfer the skillet to the oven and roast for 12-15 mins until the carrots are tender and the broth has thickened and coated the carrots.
