Ingredients

1 head cauliflower
flour , for dusting
vegetable oil
1 small potato , peeled ( optional )
1 bunch fresh flat-leaf parsley , leaves picked
sea salt
1 lemon
1 teaspoon cumin seed
2 teaspoons black mustard seeds
2 -3 dried red chilies ( less if it seems to be too hot , you can always add )
1 teaspoon black peppercorns
1 3/4 cups self-rising flour
1/2 teaspoon turmeric
1 1/2 cups cold beer
sea salt

Instructions

1.Preheat your oven to 400°F (200°C).
2.Cut the cauliflower into small florets and add them to a pot of boiling salted water. Cook for about 5-7 minutes or until tender.
3.While the cauliflower is cooking, chop the potato into small pieces and cook them in boiling salted water for about 7-10 minutes or until tender.
4.When the cauliflower and potato are tender, drain them and transfer them to a large mixing bowl. Mash them together with a fork.
5.Add the chopped parsley, cumin seeds, black mustard seeds, dried red chilies, black peppercorns, self-rising flour, turmeric, cold beer and salt to the mixing bowl and mix everything together until well combined.
6.Heat some vegetable oil in a pan over medium heat. When the oil is hot, use your hands to form the cauliflower mixture into golf ball-sized fritters and dust them with some flour.
7.Fry the fritters in the hot oil for about 3-4 minutes or until crispy and golden brown.
8.Transfer the fritters to a baking sheet lined with parchment paper and bake them in the preheated oven for another 5-7 minutes or until they are fully cooked. Serve hot with a wedge of lemon.
