Ingredients

1 1/2 cups unbleached white flour
1 teaspoon ground mixed spice

1/3 cup margarine , melted ( vegan )
3/4 cup soymilk , warmed ( may need a little more or less )
1/4 cup plain flour
1 1/2 tablespoons margarine ( vegan )
water , ice-cold , as needed
2 tablespoons sugar
2 tablespoons water

Instructions

1.In a large bowl, combine flour, mixed spice, cinnamon, nutmeg, yeast and caster sugar.
2.Add currants, mixed citrus peels and grated lemon rind to the bowl and mix well.
3.Add melted vegan margarine and warm soymilk to the bowl and stir to combine. Add more soymilk if necessary to achieve a soft dough.
4.On a lightly floured surface, knead the dough for at least 10 minutes until smooth.
5.Return the dough to the bowl and cover with a damp cloth or plastic wrap. Leave in a warm place until the dough has doubled in size.
6.Preheat oven to 200°C (400°F).
7.Divide the dough into 12 equal portions and shape each portion into a ball.
8.Place shaped dough into a baking tray, cover with a damp cloth and leave for 10 minutes.
9.In a small bowl, mix flour, vegan margarine and ice-cold water to form a smooth paste.
10.Spoon the paste into a pastry bag and pipe crosses on top of the buns.
11.Bake for 15-20 minutes until golden brown.
12.Mix sugar and water in a small bowl and heat in the microwave for 20 seconds. Brush the glaze over the hot buns.
