Old fashioned sugar cookies are an all-time American dessert classic. This recipe takes a nostalgic sweet treat to another level with the infusion of lemon verbena. Lemon verbena is packed with a citrusy fragrance and flavor profile, making it an excellent addition to sweet pastries. The crushed herb leaves are woven throughout the cookie dough, giving it a finely speckled appearance when baked. The buttery, melt-in-your-mouth texture of the cookie is perfectly balanced with a lemony zing and subtle floral notes. These cookies can be customized to suit your taste by adding a sprinkle of icing sugar or drizzling the cookies with lemon glaze. They are a perfect snack with a cup of tea or coffee, can be packaged as a gift, or enjoyed at any party or gathering.

Instructions

3.Beat eggs one at a time, followed by vanilla extract.
4.On low-speed, gradually mix the dry ingredients to wet ingredients until well combined, scraping down the sides as needed. Do not overmix.
5.Divide the dough into two parts, pat into a disk shape, and cover with plastic wrap. Chill in the refrigerator for an hour. You may also freeze the dough for up to a month.
6.Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
7.Roll the dough between your palms, creating two-inch balls. Place on the prepared baking sheet and press down gently with fingers.
