Ingredients

2 cucumbers
2 tablespoons cider vinegar
2 teaspoons caster sugar
1/4 pint sour cream or 1/4 pint creme fraiche
4 spring onions or 4 green onions
1 bunch fresh chives , snipped
1 bunch fresh dill , snipped
salt & freshly ground black pepper
1 pinch paprika ( to garnish )

Instructions

1.Wash and dry the cucumbers.
2.Slice the cucumbers thinly, using a mandoline or a sharp knife.
3.In a small bowl, mix together the cider vinegar and caster sugar until the sugar dissolves.
4.Pour the mixture over the sliced cucumbers and toss well.
5.Cover the bowl and place it in the fridge for at least an hour.
6.In a separate bowl, mix the sour cream (or creme fraiche), snipped chives, and snipped dill together.
7.Take the cucumbers out of the fridge, drain off any excess liquid, and add the sour cream mixture.
8.Toss everything together well and sprinkle a pinch of paprika on top before serving.
