2 lbs potatoes
4 tablespoons Earth Balance margarine
14 -17 ounces Brussels sprouts
1/2 cup all purpose flour
Old Bay Seasoning
oil ( for frying )

Instructions

1.Peel and dice the potatoes. Boil in salted water until tender. Drain and then mash with the Earth Balance margarine.
2.Clean the Brussels sprouts and chop them up into small pieces. Boil them in salted water until soft. Drain.
3.Add the cooked and mashed potatoes to the Brussels sprouts and mix well.
4.Add the flour and Old Bay Seasoning to the mix and continue mixing until a thick batter is formed.
5.Heat the oil in a frying pan over medium heat. Add a heaping tablespoon of the batter to the pan and cook until golden brown on both sides. Repeat until all the batter is used up.
