Faire Garbage is a traditional French-Canadian dish that has its roots in medieval France. It gets its name from the fact that it was originally made with leftover scraps of meat and vegetables, hence the term 'garbage'. While the original recipe included ingredients such as pig feet, Faire Garbage has evolved over time to include chicken gizzards and livers as the main ingredients. This dish is often served with mashed potatoes or rice and is a popular comfort food in Quebec and other French-speaking regions.

Instructions

1.Rinse the chicken gizzards and livers under cold water and drain well.
2.Slice the chicken gizzards into bite-size pieces and chop the parsley.
3.In a large pan, combine the beef broth and water and bring to a simmer over medium heat.
4.Add the gizzards, livers, parsley, sage, pepper, cinnamon, cloves, mace, bread, ginger, verjuice (or white wine vinegar), salt, and saffron to the pan. Mix well.
5.Lower the heat to medium-low and let the mixture simmer for about 20 minutes, stirring occasionally, until the bread has dissolved and the ingredients have cooked through.
6.Serve hot and enjoy!
