Ingredients

12 ounces self raising flour
2 teaspoons baking powder
3 ounces butter or 3 ounces margarine
11 ounces strong grated cheese
6 fluid ounces milk
1 dash pepper
2 teaspoons mustard powder

Instructions

1.Preheat your oven to 220°C (200°C fan)/425°F/gas mark 7.
2.Sift the flour together with the baking powder into a mixing bowl.
3.Add the butter or margarine to the bowl.
4.Rub the butter or margarine into the flour using your fingertips until it looks like breadcrumbs.
5.Add 9oz of the grated cheese, and mix well.
6.In another bowl, combine the milk, pepper, and mustard powder.
7.Pour the milk mixture into the cheese mixture.
8.Mix the ingredients together by using a palette knife.
9.The dough should come together. Be careful not to overwork it, as it may become tough.
10.Roll out the dough to a thickness of about 2.5cm.
11.Using a pastry cutter, cut out the scones and put them onto a greased baking tray.
12.Brush the tops of the scones with the non-dairy milk or beaten egg and sprinkle over the remaining cheese.
13.Bake in the oven for 12-15 minutes until golden brown.
