Ingredients

3 -4 small veal bones
1 bay leaf
1 small onion , roughly chopped
4 black peppercorns
2 lbs boneless pork legs or 2 lbs boneless pork shoulder , cubed
1/4 teaspoon cayenne pepper
1/4 teaspoon ground ginger
1/4 teaspoon ground mace
1/4 teaspoon dried sage
1/4 teaspoon dried marjoram
1 teaspoon salt
1/2 teaspoon pepper
1/4 pint milk
1/4 pint water , mixed with the milk
5 ounces lard ( i.e.Crisco ) or 5 ounces vegetable shortening ( i.e.Crisco )
1 lb flour or 2 cups flour
beaten egg ( to glaze )

Instructions

1.In a large pot, add the veal bones, bay leaf, onion, peppercorns, and enough water to cover the bones. Bring to a boil and let simmer for 1-2 hours until the stock is rich and flavorful.
2.In a separate bowl, mix together the pork cubes, cayenne pepper, ground ginger, ground mace, dried sage, dried marjoram, salt, and pepper. Add 1/2 a cup of the stock to the mixture and mix until well combined.
3.Preheat the oven to 375°F.
4.In a small saucepan, heat the milk and water until just warm.
5.In a separate bowl, mix together the lard or vegetable shortening and flour until well combined.
6.Roll out the dough into a 1-inch thick sheet and cut out two large circles for the top and bottom of the pie. Cut out a rectangle from the remaining dough to wrap around the sides of the pie tin.
7.Grease the pie tin and line with the rectangle of dough. Fill the pie with the pork and top with the second circle of dough. Brush with beaten egg.
8.Bake for 1-1.5 hours until the pastry is golden brown and the filling is cooked through.
