Ingredients

1/2 cup lukewarm water
1/4 teaspoon sugar
2 teaspoons active dry yeast
1 cup lukewarm milk

2 cups all-purpose flour ( for crumpets ) or 2 2/3 cups all-purpose flour ( for English muffins )
1/8 teaspoon baking soda
1/4 cup lukewarm water
English muffins and crumpets are two popular breakfast foods that originated in England, dating back to the 1800s. They are similar and made with the same mixture of flour, milk, yeast, and sugar but have slight variations. English muffins are denser and have a more bread-like texture and are usually made on a griddle, whereas crumpets are spongy and have small holes and are made in a circular metal ring. Both are served toasted and can be enjoyed as part of a full breakfast or brunch meal.

Instructions

1.In a small bowl, mix the lukewarm water, sugar, and active dry yeast and let sit for 10-15 minutes until yeast becomes frothy.
2.In a separate bowl, combine lukewarm milk and salt, then add yeast mixture to it.
3.Mix in the all-purpose flour (2 cups for crumpets and 2 2/3 cups for English muffins), and stir until well combined.
4.Cover the bowl with a towel and let the dough rise for 1 hour in a warm, draft-free place.
5.In another small bowl, mix the baking soda and lukewarm water until baking soda is completely dissolved.
6.Add the baking soda mixture to the dough and stir well.
7.Heat a flat griddle or a skillet on medium heat, then lightly grease with oil or butter.
8.Scoop batter onto the heated griddle using a 1/4 cup measuring cup for English muffins and a 1/8 cup measuring cup for crumpets, then cook each side until golden brown, about 3-5 minutes.
9.Remove from heat and let cool slightly, then split muffins or crumpets and toast before serving.
