Ingredients

2 tablespoons olive oil
250 g chestnut mushrooms ( thickly sliced )
1 garlic clove ( thinly sliced )
1 bunch fresh parsley , leaves only
1 onion , finely chopped
1 celery rib , finely chopped
400 g chopped tomatoes
red chili pepper , deseeded and finely chopped ( or use dried chili flakes )
300 g spaghetti ( or 10 oz )

Instructions

1.Cook spaghetti in salted boiling water till al dente, reserve some cooking water.
2.Heat some oil in a pan and fry mushrooms till brown, season with salt and pepper and set aside.
3.In the same pan, heat some more oil and fry garlic and chilli pepper till fragrant.
4.Now add onions and celery to it and cook till softened.
5.Pour in the chopped tomatoes and season with salt and pepper, cook for 10-12 mins, until the sauce has thickened.
6.Add mushrooms to the pan and some reserved cooking water to the pan to loosen up the sauce.
7.Add your spaghetti to the pan and coat it well with the sauce.
8.Top with chopped parsley leaves and serve hot!
