3 tablespoons milk , warmed
8 ounces flour
1 pinch salt

1 egg , beaten to glaze

Instructions

1.Preheat oven to 180°C.
2.In a small cup, mix together the saffron strands and milk.
3.In a large mixing bowl, sift the flour, salt, and cinnamon together.

5.Stir in the currants.
6.In another bowl, combine the yeast, caster sugar, clotted cream, and the saffron milk mixture until the sugar has dissolved.
7.Pour the yeast mixture into the flour mixture and combine until a sticky dough forms.
8.Transfer the dough to a lightly floured work surface and knead for a few minutes.
9.Place the dough in a lightly greased bowl, cover with a tea towel and let it rest in a warm place for about 45 minutes, or until it has doubled in size.
10.Afterward, transfer the dough to a floured surface, knead for a few seconds to get rid of the air, then divide into 10-12 portions of equal size.
11.Shape each separately into a bun, and place them on a baking tray.
12.Cover with a tea towel and let them rise for another 15 minutes.
13.Using a pastry brush, delicately glaze the buns with the beaten egg.
14.Bake in preheated oven for 15-20 minutes until golden brown.
15.Remove from oven and let it cool on a wire rack.
