1 bay leaf
2/3 cup dry white wine
3/4 cup butter or 3/4 cup vegan margarine , softened
1 tablespoon chopped fresh herb
salt
fresh ground pepper
fresh chives , chopped , garnish

Instructions

1.Preheat the oven to 400°F (200°C).
2.Lay a sheet of phyllo pastry on a clean, dry surface.
3.Brush the surface of the pastry with melted butter or vegan margarine and fold it in half.
4.Cut the folded pastry in half and brush the surface with melted butter or vegan margarine.
5.Cut each half into four strips.
6.Place the trimmed asparagus spears in a large skillet, along with the shallots, bay leaf, dry white wine, and a pinch of salt. Cover the skillet and simmer for 5-7 minutes until the asparagus spears are tender.
7.Drain the asparagus and discard the bay leaf. Allow the asparagus to cool to room temperature.
8.Spread a tablespoon of softened butter or vegan margarine over each strip of phyllo pastry.
9.Place an asparagus spear at the bottom of each strip and roll the pastry around the asparagus spear until it is fully wrapped.
10.Place the wrapped asparagus on a baking sheet and bake for 15-20 minutes, until the pastry is golden brown.
11.Serve hot, garnished with salad leaves and fresh chives.
