Ingredients

1/2 cup raisins
1/4 cup currants

1 orange , juice and zest of
1/4 cup hot water
1 tablespoon vanilla
1/2 tablespoon instant yeast
1 1/4 cups sorghum flour
1 cup rice flour
1/4 cup chickpea flour
1/4 cup chestnut flour
1/2 cup tapioca starch
1 teaspoon guar gum
1 teaspoon ground allspice
1 tablespoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 cup jaggery or 1/2 cup coconut sugar
1/4 cup diced candied fruit ( optional )
1 teaspoon sea salt
1/4 cup canola oil
1 egg , beaten
1/3 cup rice flour
1 teaspoon sugar
1/4 cup water
2 drops almond extract ( optional )
3 tablespoons honey , warmed until runny

Instructions

1.In a small bowl, mix together the raisins, currants, craisins, orange juice, zest, hot water, and vanilla. Let it sit for 10 minutes to plump up the fruit.
2.In a large bowl, whisk together the sorghum flour, rice flour, chickpea flour, chestnut flour, tapioca starch, guar gum, allspice, cinnamon, nutmeg, jaggery, sea salt, canola oil, and egg until the dough is smooth.
3.Fold in the fruit mixture and diced candied fruit (if using) until evenly incorporated.
4.Grease a baking tray and shape the dough into 12 equal-sized balls. Place them on the tray, cover with plastic wrap and let rise for 30 minutes in a warm spot.
5.Preheat the oven to 375°F/190°C and mix the rice flour, sugar, water, and almond extract (if using) to create a paste. Pipe a cross on top of each bun with the paste.
6.Bake the buns for 25-30 minutes, or until golden brown on top and fully cooked through.
7.Brush the tops of the buns with the warmed honey and let cool before serving.
