Ingredients

450 g gooseberries ( fresh or frozen )
2 tablespoons water
110 g caster sugar ( superfine sugar )
70 ml elderflower cordial
290 ml double cream ( heavy cream )

Instructions

1.In a medium saucepan, add the gooseberries and water and bring to a boil.
2.Reduce the heat to medium-low and let simmer until the gooseberries are soft, about 10 minutes.
3.Add the caster sugar and stir until fully dissolved.
4.Remove from heat and let cool slightly.
5.Stir in the elderflower cordial and blend until smooth.
6.In a separate large bowl, whip the double cream until stiff peaks form.
7.Fold the gooseberry mixture into the whipped cream until fully combined.
8.Pour the mixture into a container and freeze for a minimum of 4 hours, or overnight.
