Ingredients

2 tablespoons olive oil
2 onions , diced
1 garlic clove , chopped
6 pork and herb sausages , chopped into chunks
2 ounces chorizo sausage , chopped into chunks
2 ounces pancetta , cubed
4 baby leeks , finely sliced
8 ounces canned butter beans , drained
6 cups vegetable stock
8 field mushrooms , sliced
2 sprigs fresh thyme
1 savoy cabbage
Sausage casserole is a classic comfort food that's perfect for cold nights or lazy weekends. Instructions

1.Heat the olive oil in a large saucepan, then add the onions and garlic and fry for 3-4 minutes until softened.
2.Add the sausages, chorizo and pancetta, and cook for a further 5 minutes until browned.
3.Stir in the sliced leeks and butter beans, and cook for 2-3 minutes until the leeks have softened.
4.Pour in the vegetable stock, and add the sliced mushrooms and thyme sprigs.
5.Bring to the boil, then reduce the heat and simmer for 20-25 minutes.
6.Meanwhile, remove the outer leaves from the savoy cabbage, and cut it into wedges.
7.Add the cabbage to the pan, and cook for a further 5-10 minutes until tender.
