Ingredients

1 1/2 lbs young parsnips , diced into 1 inch cubes
1 medium bramley apple
1 teaspoon coriander seed
1 teaspoon cumin seed
6 whole cardamom pods ( seeds only )
1 1/2 ounces butter
1 tablespoon peanut oil
2 medium onions , chopped
2 cloves garlic , chopped
1 teaspoon turmeric
1 teaspoon cayenne pepper
1 teaspoon ground ginger
2 pints good-flavoured vegetable stock
salt
fresh ground pepper

Curried Parsnip and Apple Soup With Parsnip Crisps is a warm and comforting soup, perfect for cold winter days. Instructions

1.Preheat your oven to 200°C/400°F/Gas 6.
2.Spread the parsnip crisps onto a baking sheet and toss them with six tablespoons of the peanut oil. Season them with salt and bake for 8-10 minutes, or until they are crispy and golden brown. Remove them from the oven and set them aside.
3.In a large soup pot, melt the butter and peanut oil over medium-high heat. Add in the onions and garlic, and cook until the onions become soft and translucent.
4.Next, add in the diced parsnips and the apple. Stir everything together and then add in the coriander, cumin, cardamom, turmeric, cayenne pepper, and ground ginger. Mix everything together, allowing the spices to coat the vegetables.
5.Pour the good-flavoured vegetable stock into the pot, cover it, and let everything simmer for 20-25 minutes, or until the parsnips are soft and tender.
6.Once the soup is done cooking, remove it from heat and let it cool for a few minutes. Using a blender, puree the soup in batches until it is smooth.
7.Return the soup to the pot and add in the salt and fresh ground pepper, adjusting the seasoning to taste.
8.Reheat the soup over a low heat and serve it hot, garnished with the crispy parsnip crisps.
