Ingredients

175 g smoked streaky bacon or 175 g just under 6 ounces smoked streaky bacon
100 g leeks or 100 g just over 3 ounces leeks
1 egg
175 g mushrooms , a small mushroom variety or 175 g just under 6 ounces mushrooms
175 g cherry tomatoes or 175 g just under 6 ounces cherry tomatoes
225 g white cabbage or 225 g just over 7 ounces white cabbage , cooked
3 tablespoons vegetable oil
450 g potatoes or 450 g just over 14 ounces potatoes , cooked and mashed
salt & freshly ground black pepper
Bubble and Squeak Cakes, a classic English breakfast dish, originated in the 1800s. Traditionally made from leftover vegetables from the roast dinner, it is a thrifty meal that helped prevent food waste. Bubble refers to the sound of the vegetables cooking while squeak refers to the sound the cakes make when you fry them. This savoury treat is an excellent way to use up leftover cooked veggies and potatoes. You can make your version of Bubble and Squeak Cakes with any combination of leftover vegetables you have and create a nutritious and flavourful meal for your family. The smoked bacon provides an additional layer of flavour, making it more satiating and providing an enjoyable savoury breakfast meal for your family.

Instructions

1.In a pan, cook the bacon for 5 minutes over medium heat until slightly crispy and transfer to a plate
2.In the same pan, cook the leeks for 2 minutes and add to the plate with bacon
3.Toss in the mushrooms and cook for 3 minutes until slightly golden brown before removing from pan
4.In the same pan, halve the cherry tomatoes and cook for 2 minutes until they soften before setting aside
5.Add the mashed potatoes and cooked cabbage to the pan and stir together over medium heat for 5 minutes
6.Stir in the bacon, leeks, mushrooms and cherry tomatoes into the pan with the mashed potato and cabbage mixture
7.Mix in the egg and season to taste
8.Heat the oil in the pan before frying the mixture until golden brown
9.Flip the Bubble and Squeak Cakes over and cook for a further 2-3 minutes or until done
