4 ounces self raising flour
2 large free range eggs
1 teaspoon baking powder

1 teaspoon orange zest , finely grated
3 tablespoons lime marmalade , melted
3 tablespoons chocolate sprinkles , to decorate or 3 tablespoons preserved gingerroot , finely chopped

Instructions

1.Preheat oven to 180 degrees Celsius and grease an 8 inch loose-bottomed tin.

4.Mix in orange zest , lime marmalade, and ginger to the mixture.
5.Sift in flour, baking powder and fold until well combined. You can add some milk if the batter is too thick.
6.Pour the mixture into the greased tin and smooth the surface.
7.Bake it for 25-30 minutes or until the cake is golden brown and well-risen. To check if the cake is fully cooked, insert a toothpick into the cake and if it comes out clean, the cake is ready.
8.Remove the cake from oven and let it cool for 10 minutes before removing from the tin.
9.Sprinkle chocolate sprinkles or ginger root over the cake to decorate.
