Ingredients

1 cardamom , pod
1 clove
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1 egg white
50 g caster sugar
1/2 teaspoon cornstarch
1/4 teaspoon white wine vinegar
1/4 teaspoon vanilla extract
1/2 teaspoon orange zest
2 tablespoons creme fraiche ( Use whipped cream mixed with sour cream if unavailable )
300 ml red wine
85 g caster sugar
2 cloves
2 allspice berries
1 cinnamon stick , broken in half
4 cardamom pods
1/2 lemon , zest of
1/2 orange , zest of
1 vanilla pod , split
1 bay leaf
6 dried figs
125 ml mulled wine , reserved from the figs
50 g caster sugar
3 tablespoons cocoa powder
25 g plain chocolate squares , broken into small pieces
Mulled Spiced Pavlovas are a warm and cozy twist on the classic pavlova dessert. The spice mixture in the pavlovas adds a unique flavor that pairs perfectly with the mulled wine sauce. This dessert is perfect for a winter dinner party or holiday gathering, and is sure to impress your guests. While the pavlovas can be a bit tricky to make, they are well worth the effort for their light and crispy texture. Instructions

1.Preheat the oven to 180C/350F.
2.Crush the cardamom pod and clove in a mortar and pestle and add them to a small bowl along with the allspice and cinnamon. Mix well.
3.In a large bowl, beat the egg white until stiff peaks form.
4.Gradually add in the caster sugar, cornstarch, white wine vinegar, vanilla extract, and orange zest, beating until stiff peaks form again.
5.Gently fold in the spice mixture.
6.Spoon the mixture onto a baking sheet, forming 4 mounds. Use the back of a spoon to create a well in the center of each mound.
7.Bake for 10-12 minutes, or until the tops are lightly browned and crisp.
8.While the pavlovas are baking, make the mulled wine sauce. In a large saucepan, add the red wine, caster sugar, cloves, allspice berries, cinnamon stick, cardamom pods, lemon zest, orange zest, vanilla pod, and bay leaf.
9.Bring to a boil and then reduce heat to a simmer, stirring occasionally for 10 minutes.
10.Add the dried figs and simmer for another 5 minutes.
11.Remove the figs with a slotted spoon and set them aside in a small bowl.
12.Add the mulled wine sauce to the same bowl, discarding any solids that remain in the saucepan.
13.Add the remaining caster sugar, cocoa powder, and chocolate to the bowl with the figs and mulled wine sauce and stir until well combined.
14.Spoon a dollop of creme fraiche onto each of the pavlovas and top with the mulled wine sauce and figs. Serve immediately.
