Instructions

1.Preheat the grill to medium
2.Poach smoked haddock in milk with bay leaf, sliced onion and parsley for 7-10 minutes, then remove from pan, drain and flake the fish

4.Heat the butter in a non-stick frying pan
5.Pour the egg mixture into the pan and cook for 4-5 minutes until set
6.Remove the pan from heat and place under the grill for 4-5 minutes until the top is golden-brown
7.Use a spatula to carefully transfer the omelette onto a serving plate, and sprinkle freshly grated parmesan cheese over the top
8.Garnish with grilled tomatoes and watercress, and serve hot
