Instructions

1.Preheat the oven to 375 degrees F.

5.In a separate bowl, mix together 1 1/2 cups of flour, 1/2 cup of sugar, 2 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.
6.In another bowl, mix together 2/3 cup of low-fat yogurt, 1/4 cup of melted butter, 3 tablespoons of skim milk, and 1 large lightly beaten egg. Mix until well combined.
7.Slowly add the dry ingredients to the wet ingredients, stirring until just combined.
8.Divide the mixture evenly over the apples.
9.Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
10.Let cool for a few minutes then run a knife around the edge of the muffins to loosen them and invert the muffin tin onto a wire rack to release the muffins. Serve and enjoy!
